He Passed!

My handsome husband with his company truck
On the job at I-81
I am so thrilled to announce that we found out a few days ago that Daniel passed the P.E. (Professional Engineer) exam which he took on April 13th. This is huge for us and we are so grateful! Many do not pass this 8 hour exam on the first try and it is extremely difficult. Daniel studied so hard for so many months and kept at it even though I got pregnant and very sick right in the middle of this process. I am so pleased with him! I wish I had taken a picture of the enormous stack of books and binders he had to study. He also had to jump through several hoops to even be approved by the board to take the exam before receiving his approval letter back in February. I so admire his determination! He has always had the ability to find a way to do or get whatever he is after without worrying about what other people think or the odds being against him.

Psalm 126:3 ~ The Lord has done great things for us and we are filled with joy!

Curry Chicken Salad

Daniel came home for lunch today so I made this chicken salad out of the organic chicken we had leftover from dinner last night and wrapped it in tortillas for everyone. It was yummy and Daniel loved it so I thought I would share the recipe! I had to double this recipe for our family of 6.

1 cup chopped cooked chicken (I flavored mine with lemon pepper)

  • 1/4 cup low-fat mayonnaise
  • 1 teaspoon curry powder
  • 2 teaspoons water
  • 1 cup
  • 3/4 cup chopped Braeburn apple (about 1 small)
  • 1/3 cup diced celery
  • 3 tablespoons raisins
  • 1/8 teaspoon salt

  1. Combine mayonnaise, curry powder, and water in a medium bowl, stirring with a whisk until well blended. Add the Grilled Lemon-Herb Chicken, chopped apple, celery, raisins, and salt; stir mixture well to combine. Cover and chill.

Our First Car Race

So we did something we have been promising the boys we would do for a long time. Take them to a car race! They really loved it and Daniel and I were a lot more entertained than we thought we would be. Each of the boys chose a car and cheered for it the whole time. James's car actually won! The kids had fun going down on the track after the race, they got to peek inside some of the race cars and meet a couple of the drivers.

Saturday night was actually chilly here in Southwest VA
It certainly didn't feel like June 2nd!
We all shared this funnel cake, yummy!
