Healthier "No Bake Cookies" AKA "Preacher Cookies"

I grew up eating these cookies. Almost every winter evening that we spent at MawMaw and PawPaw Willis's farm. MawMaw would ask us grandaughters if we wanted to make one of these 3 kinds of cookies... "Preacher cookies", "Southern Tea Cakes" or "Cornflake Cookies". Even though my sweet grandparents lived way out in the country in Northwest GA, MawMaw always made sure she had the ingredients to make these 3 kinds of cookies. I don't ever remember a time that she was out of any ingredient that we needed! I had been trying to think of a way to make these healthier so that I could make them for my family to enjoy occasionally and I think I have found a way! We thought they were just as delicious if not more so! My family loved them! I will include my grandmothers original recipe below and then my adapted one at the bottom.

2 c. sugar
3 c. quick oats
1/8 tsp. salt
4 Tbsp. cocoa
1/2. c. peanut butter
1/2 c. margarine
1 tsp. vanilla
1/2 c. pet milk

1 c. sucanat or honey granules
3 c. quick oats
1/8 tsp. sea salt
4 Tbsp. cocoa
1/2 c. natural peanut butter
1/2 c. pastured organic butter
1/2. tsp. vanilla
1/2 c. raw organic milk

*Bring butter, cocoa and sucanat to a rolling boil for 1 minute. Remove from heat and stir in the rest of ingredients, adding oats last. Spoon onto wax paper to dry. Enjoy! Makes approximately 3 dozen cookies.
